  • 1 (8 oz.) pkg. Mozzarella cheese
  • 16 oz. Ricotta or cream cheese
  • 1 jar tomato sauce
  • bread crumbs
  • eggs
  • oil
  • 2 medium to large eggplants

Directions

    Slice the eggplants into 1/4-inch slices.

    Peel the eggplants (optional) first, dip eggplant into eggs and then cover them with bread crumbs and put it into a pan of hot oil.

    When the eggplant is golden brown, put 1 layer into a casserole dish.

    Add Ricotta or cream cheese to taste; add tomato sauce and sprinkle with Mozzarella cheese.

    Keep adding layers until the dish is full. Bake at 350° for about 30 to 40 minutes.
