  • 1 can tomato sauce
  • 1/2 c. grated Romano cheese
  • 1 (8 oz.) pkg. grated Mozzarella
  • 1 egg
  • 1 eggplant
  • olive oil
  • Italian bread crumbs
  • ground meat, browned and mixed with tomato sauce
  • dash of basil
  • dash of oregano
  • mushrooms (optional)
  • onion to taste
  • garlic to taste

Directions

    Peel and slice eggplant very thin.

    Dip in egg and Italian bread crumbs.

    Fry in olive oil and drain.

    Make a sauce with tomato sauce, Romano cheese, salt and pepper, basil, oregano, onion, garlic, Parmesan cheese and mushrooms.

    In casserole dish, alternate sauce, eggplant, and Mozzarella cheese (like a lasagna). Bake at 350° for approximately 25 to 30 minutes.
