  • 1 eggplant, sliced into 1/2-inch rounds
  • 2 eggs, slightly beaten
  • 1 1/2 c. cornmeal
  • 1/4 tsp. salt
  • 2 c. Mozzarella cheese, grated
  • 1 large jar favorite spaghetti sauce
  • olive oil
  • 1/4 c. Parmesan cheese, grated
