- 2 c. spaghetti sauce
- 1/2 to 3/4 c. Parmesan cheese
Directions

1Peel eggplant.

2Dice eggplant in cubes and cook in water for 10 to 15 minutes.

3Drain off water.

4Spread eggplant in casserole. Mix 1/2 of Parmesan cheese in spaghetti sauce; pour over eggplant.

5Sprinkle remaining cheese.

6Bake in a 350° oven for 25 to 35 minutes.
