- 2 eggs
- 1/2 c. Parmesan cheese
- 1/2 lb. sliced Mozzarella cheese
- Italian bread crumbs
- 1 jar Ragu spaghetti sauce
Directions

1Peel eggplant and cut in round 1/4-inch slices.

2Beat eggs with 2 tablespoons water.

3Dip eggplant in Italian bread crumbs, then into eggs and again in bread crumbs.

4Heat all in skillet and brown eggplant (drain on paper towel).
