  • 26 Premium crackers (any variety), finely rolled (about 1 c. crumbs)
  • 1 tsp. Italian seasoning
  • 1 medium eggplant, peeled and sliced in 1/4-inch rounds
  • 2 eggs, slightly beaten
  • 2 Tbsp. vegetable oil
  • 1 (26 oz.) jar spaghetti sauce (about 2 3/4 c.)
  • 3/4 c. shredded, part-skim Mozzarella cheese
  • 1/4 c. grated Parmesan cheese
