- 1 medium eggplant
- 1 1/4 c. cracker crumbs
- 1 1/4 c. Cheddar cheese, shredded
- 2 eggs, beaten
- 2 Tbsp. chopped parsley
- 2 Tbsp. chopped green onions
- 1/2 tsp. salt
- 1 clove garlic, minced fine
- 1/8 tsp. black pepper
Directions

1Pare and core eggplant and cook in water 5 minutes.

2Drain and mash.

3Add to other ingredients.

4Mix well and shape into 8 patties.

5Fry in hot oil until golden brown on each side.
