- 3 Tbsp. olive oil
- 1 large onion, chopped
- 6 cloves garlic, sliced
- 1 lb. fresh mushrooms, sliced, or 3 small cans sliced mushrooms
- 1/2 tsp. dried red pepper, crushed
- 1 large (28 oz.) can Italian plum tomatoes, chopped and juices reserved
- 1 (15 oz.) can tomato sauce
- 1 tsp. sugar
- 2 tsp. dried basil, crumbled
- 1 tsp. dried oregano, crumbled
- 1 pkg. spaghetti
- 1/2 c. Parmesan cheese
Directions

1Heat oil in heavy large skillet over medium heat.

2Add onion; saute until tender, about 10 minutes.

3Add garlic; saute 1 minute. Add mushrooms and crushed red pepper; saute until mushrooms just begin to soften, about 5 minutes.

4Add tomatoes (cut up) and reserved juices.

5Cover and cook around 2 hours on low heat. Makes enough sauce for 1 package spaghetti.

6Makes 6 servings.
