  • 3 Tbsp. olive oil
  • 1 large onion, chopped
  • 6 cloves garlic, sliced
  • 1 lb. fresh mushrooms, sliced, or 3 small cans sliced mushrooms
  • 1/2 tsp. dried red pepper, crushed
  • 1 large (28 oz.) can Italian plum tomatoes, chopped and juices reserved
  • 1 (15 oz.) can tomato sauce
  • 1 tsp. sugar
  • 2 tsp. dried basil, crumbled
  • 1 tsp. dried oregano, crumbled
  • 1 pkg. spaghetti
  • 1/2 c. Parmesan cheese

Directions

    Heat oil in heavy large skillet over medium heat.

    Add onion; saute until tender, about 10 minutes.

    Add garlic; saute 1 minute. Add mushrooms and crushed red pepper; saute until mushrooms just begin to soften, about 5 minutes.

    Add tomatoes (cut up) and reserved juices.

    Cover and cook around 2 hours on low heat. Makes enough sauce for 1 package spaghetti.
