Eggplant Pepper Rolls

  • 2 tablespoons olive oil
  • 1 eggplant large, thinly sliced lengthwise
  • 12 slices roasted red pepper from a jar, drained
  • 6 ounces fresh mozzarella sliced
  • 12 fresh basil leaves large
  • arugula leaves to serve

Directions

    Preheat the oven to 400°F. Heat the oil in a frying pan on high. Cook the eggplant slices in batches, flipping once, until tender and golden. Drain on paper towels.

    Lay the slices of eggplant flat. Place 1 piece of roasted pepper, 1 mozzarella slice and 1 basil leaf on each slice. Roll and secure with toothpicks. Place in a baking dish and bake for 10 mins. Serve with arugla.
