- 1 refrigerated pie crust
- 1 eggplant, peeled and thinly sliced
- 1/2 cup chopped green onions
- 1 1/2 teaspoons Italian seasoning
- 1 pinch salt and ground black pepper to taste
- 1 cup shredded mozzarella cheese
- 1 cup shredded sharp Cheddar cheese
- 1 cup olive oil mayonnaise

1Preheat oven to 450 degrees F (230 degrees C). Press pie crust into a pie plate.

2Bake in the preheated oven until slightly brown, about 8 minutes. Remove crust from oven and lower temperature to 350 degrees F (175 degrees C).

3Layer eggplant, green onions, Italian seasoning, salt, and pepper in the pie crust, ending with a layer of eggplant. Mix mozzarella cheese, Cheddar cheese, and mayonnaise together in a bowl; spread over eggplant layer. Cover the browned edges of pie crust with thin strips of aluminum foil.
