Ingredients

  • 1 eggplant
  • 2 eggs
  • 1 c. nut meats, finely ground
  • 2 small onions (optional)
  • 1/2 c. cracker or bread crumbs
  • 1 tsp. sage
  • 3 stalks celery
  • 2 Tbsp. oil
  • 2 Tbsp. milk
  • salt to taste
  • 1/4 to 1/2 c. cottage cheese
  • 1/2 pkg. onion soup (optional)

Directions

    Peel eggplant and cut into slices.

    Cook in small amount of salted water.

    Mash and add to remaining ingredients.

    Mix well and bake for 40 minutes at 350°.
