- 2 medium size eggplants
- 2 slices white bread crust removed
- 2 tbls cream
- 2 clove of garlics crushed
- Juice of 1 lemon
- 2 spoons finely chopped almonds
- 2 tbls spoons of grated Parmesan cheese
- 1/2 cup Extra virgin Olive oil
Directions

1Pre-heat oven to 400 degrees cut eggplants in half place on baking sheet cut size down

2bake until eggplant is soft appx 30 - 40 min

3place bread in bowl cover with cream soak until bread is soft

4Scrap roasted eggplant into bowl

5Squeeze bread to remove excess cream Add to eggplant

6Add rest of ingredients to eggplant stir and refrigerate until ready to serve
