Ingredients

  • 2 medium size eggplants
  • 2 slices white bread crust removed
  • 2 tbls cream
  • 2 clove of garlics crushed
  • Juice of 1 lemon
  • 2 spoons finely chopped almonds
  • 2 tbls spoons of grated Parmesan cheese
  • 1/2 cup Extra virgin Olive oil

    Pre-heat oven to 400 degrees cut eggplants in half place on baking sheet cut size down

    bake until eggplant is soft appx 30 - 40 min

    place bread in bowl cover with cream soak until bread is soft
  4. 4
    Scrap roasted eggplant into bowl

    Squeeze bread to remove excess cream Add to eggplant
  6. 6
    Add rest of ingredients to eggplant stir and refrigerate until ready to serve
