  • 1 medium onion, grated
  • 1/2 tsp. lemon juice
  • 1 tsp. oil to taste
  • 1 tsp. mayonnaise to taste
  • salt

Directions

    Wrap eggplant in aluminum foil.

    Bake at 350° for 1/2 hour or until soft.

    Remove skin.

    Mash with other ingredients.

    Serve on bread, crackers and/or pita bread.
