- 1 medium eggplant
- 1/4 c. cooked, chopped onion, drained
- 1 can Cheddar cheese soup
- 2 egg whites
- salt to taste
- pepper to taste
- shredded cheese
Directions

1Chop eggplant; cook and drain.

2Mix eggplant and onion together.

3Add soup.

4Fold in stiffly beaten egg whites, salt and pepper.

5Place all ingredients in a casserole dish; add shredded cheese on top.

6Bake at 275° for about 40 minutes.
