  • 1 medium eggplant
  • 1/4 c. cooked, chopped onion, drained
  • 1 can Cheddar cheese soup
  • 2 egg whites
  • salt to taste
  • pepper to taste
  • shredded cheese

Directions

    Chop eggplant; cook and drain.

    Mix eggplant and onion together.

    Add soup.

    Fold in stiffly beaten egg whites, salt and pepper.

    Place all ingredients in a casserole dish; add shredded cheese on top.

    Bake at 275° for about 40 minutes.
