  • 1 large eggplant
  • 1 small onion
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 3/4 c. milk
  • 1/2 to 1 c. grated cheese
  • 3/4 c. soft bread crumbs
  • 1 Tbsp. catsup
  • 2 beaten eggs

Directions

    Peel eggplant; cut up into pieces.

    Dice a small onion and boil together until tender.

    Drain and mash.
  4. 4
    Season with salt and pepper.

    Mix butter, flour and milk.

    Add cheese, bread crumbs, catsup and eggs.

    Mix well and add all this to mashed eggplant. Bake in buttered casserole dish at 350° for about 40 minutes until brown on top.
