- 1 large eggplant
- 1 small onion
- 2 Tbsp. butter
- 2 Tbsp. flour
- 3/4 c. milk
- 1/2 to 1 c. grated cheese
- 3/4 c. soft bread crumbs
- 1 Tbsp. catsup
- 2 beaten eggs
Directions

1Peel eggplant; cut up into pieces.

2Dice a small onion and boil together until tender.

3Drain and mash.

4Season with salt and pepper.

5Mix butter, flour and milk.

6Add cheese, bread crumbs, catsup and eggs.

7Mix well and add all this to mashed eggplant. Bake in buttered casserole dish at 350° for about 40 minutes until brown on top.
