- 1 large eggplant
- 1 qt. whole milk
- 1/2 stick margarine
- 1 medium onion
- 2 Tbsp. black pepper
- 1 qt. water
- 1 stick saltine crackers
Directions

1Peel eggplant; put in 3-quart boiler.

2Put 1 quart water in. Boil until tender; drain water off and chip up onion in the pot. Pour milk, margarine, black pepper and salt to suit taste.

3Bring to boil about 10 minutes.

4Put crackers in when ready to eat.
