- 1 1/2 c. sliced onion
- 2 green peppers, cut in squares
- 1 lb. ground beef
- 2 Tbsp. shortening
- 1 small eggplant
- 32 oz. can tomatoes
- 1 envelope spaghetti sauce mix
- 1/4 lb. Mozzarella cheese, grated
Directions

1Cook onions, green peppers and ground beef in oil until meat is browned and vegetables tender.

2Cut eggplant into 3/4-inch cubes.

3Add eggplant, tomato and spaghetti sauce mix to meat mixture.

4Bring to a boil.

5Cover.

6Simmer 15 minutes or until eggplant is done.

7Top with cheese.

8Cover and simmer until cheese melts.

9What's left over, put in pita bread or flour tortillas and heat.
