Ingredients
- 2 lb. Ricotta cheese (skim or whole milk)
- 1/2 to 1 lb. Mozzarella cheese
- 2 boxes frozen spinach, cooked and drained
- 2 medium eggplant, cut on length
- 1 jar or can tomato sauce with mushrooms
- grated cheese
Directions

1Heat oven to 350°. Fry eggplant and drain on paper towels. Cook spinach according to directions and drain.

2Mix Ricotta cheese and spincah, don't beat, just blend.

3Spread evenly in pan. Layer eggplant on top.

4Either slice or grate Mozzarella cheese and layer over eggplant.

5Cover with sauce.

6Sprinkle grated cheese. Give it a blessing and throw it in preheated oven for 45 minutes until bubbly.
