- 1 eggplant, sliced
- 2 tomatoes, sliced
- 1 sweet onion, sliced
- 14 cup butter, melted
- 1 teaspoon dried basil
- 1 teaspoon sea salt
- 8 ounces shredded Italian cheese blend
- 1 cup dry breadcrumbs
Directions

1Preheat oven to 450.

2Toss bread crumbs with 2 tablespoons melted butter; set aside.

3In a 9x11 baking dish, layer eggplant, then tomatoes, then onion.

4Drizzle with remaining butter, sprinkle with salt & basil.

5Cover pan with foil, bake 30 minutes.

6Remove foil & sprinkle with cheese and buttered bread crumbs.

7Bake, uncovered, another 10 minutes.
