  • 1 eggplant, sliced
  • 2 tomatoes, sliced
  • 1 sweet onion, sliced
  • 14 cup butter, melted
  • 1 teaspoon dried basil
  • 1 teaspoon sea salt
  • 8 ounces shredded Italian cheese blend
  • 1 cup dry breadcrumbs

    Preheat oven to 450.

    Toss bread crumbs with 2 tablespoons melted butter; set aside.

    In a 9x11 baking dish, layer eggplant, then tomatoes, then onion.

    Drizzle with remaining butter, sprinkle with salt & basil.

    Cover pan with foil, bake 30 minutes.

    Remove foil & sprinkle with cheese and buttered bread crumbs.

    Bake, uncovered, another 10 minutes.
