Eggplant With Garlic Sauce(Szechuan Style)

- 1 lb. eggplant
- 1 c. salad oil
- 1/4 lb. ground pork or poultry
- 2 tsp. minced ginger
- 2 tsp. minced garlic
- 3 Tbsp. soy sauce
- 2 tsp. sugar
- 2 tsp. vinegar
- 1 tsp. cornstarch
- 1 tsp. minced chili pepper (optional)
Directions

1In a small bowl, mix together the ginger, garlic, soy sauce, sugar, vinegar, cornstarch and chili pepper.

2Set aside.

3Heat oil in frying pan until hot.

4Add eggplant and fry until soft.

5Set aside and pat with paper towel to remove excess oil.

6Pour out all but 1 teaspoon oil and fry meat until cooked.

7Set meat aside and drain excess oil.

8Heat ginger/garlic mixture in pan until near boiling.

9Add eggplant and meat.
-
10Mix together and cook 1 minute. Makes 6 servings.
