  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 1 green capsicum, roughly chopped
  • 1 1/3 cups roast capsicum salsa
  • 4 eggs
  • 1/2 cup grated KRAFT Tasty Cheese
  • crusty toast, to serve

Directions

    Heat the oil in a large 26cm frying pan over medium heat.

    Add the onion and capsicum and saute until almost tender.
  3. 3
    Stir in the salsa.

    Crack the eggs evenly spaced apart, into pan, then sprinkle over the cheese.
  5. 5
    Cover pan and cook 5-8 minutes until eggs are cooked to you liking and cheese has melted.

    Serve with crusty toast.
