- 4 English muffins, split
- 1 stick butter, softened
- 8 slices Canadian bacon (optional)
- 2 (10 oz.) pkg. frozen chopped spinach
- 8 eggs
- 1/2 c. light cream
Directions

1Cook and drain spinach according to package directions. Spread cut side of English muffin with 1 tablespoon butter each. Place cut side up in a single layer in bottom of a 9 x 13-inch greased pan.

2Top each muffin with a slice of Canadian bacon. Make a nest of drained spinach on top of each slice of bacon. Carefully break an egg into each nest.

3Top each with a tablespoon of cream.

4Bake in a preheated 350° oven until eggs are set, 15 to 20 minutes.
