  • 10 eggs
  • 2 tbsp.sour cream or cream fraiche
  • 1/2 tsp.Mild Dijon
  • 1 tsp. goose fat or butter
  • 1 tsp. mayonaisse.
  • 3 oz. mushrooms
  • salt,pepper to taste
  • parsley and Dill

Directions

    Hardboil the eggs,cool and cut in half the length; remove and retain the yellows.
  2. 2
    boil mushrooms, done; drain and chop; drain. Mix yellows,Butter,Mayonnaise,Sourcream,salt,mustard and pepper with the Mushrooms. Divide equally among the halves. garnish liberally with chopped or sprigs of parsley and Dill.
