Eggs On Spinach!

  • 2 cup Spinach leaves
  • 3/4 cup Mushrooms chopped
  • 1 cup Grated carrot
  • 1 Egg
  • 4 clove Garlic - chopped
  • 1/4 tsp Olive oil
  • 1 Salt
  • 1/4 tsp Pepper powder
  • 4 Peppercorns

Directions

    Heat oil in a non stick pan.

    Add chopped garlic and peppercorns.

    Add mushrooms and saute for a minute.

    Then add spinach and grated carrot and saute for 2 more minutes.

    Add salt and pepper, and few drops of more olive oil if needed.

    Make kind of a hole in middle of sauteed spinach and break an egg without disturbing the yolk.

    Cook for 2 minutes on low flame and season with salt and pepper powder.
