- 2 eggs per serving
- cooked, cubed potatoes or any vegetable desired
- 1 onion, chopped
- vegetable oil (safflower)
- pepper to taste and any other herbs or seasonings desired
Directions

1In a 6-inch skillet, cover bottom with oil and fry potatoes and onions until onions are soft and potatoes crusting.

2Beat eggs in a small bowl.

3Add pepper.

4Pour over top of potatoes and onions and cook until top is set.

5Slide onto plate and reverse into skillet again for mixture to set completely.

6Serve with large green salad.
