- 1/2 lb. sliced mushrooms
- 4 Tbsp. butter
- 1 large onion
- 1 c. barley (long cooking)
- 2 c. chicken broth
- 1 clove garlic
- toasted almonds for sprinkling on top
Directions

1Saute onion and mushrooms in butter.

2Add barley and brown. Add crushed garlic clove.

3Pour into greased casserole.

4Pour over this 1 cup of chicken broth.

5Cover.

6Bake at 350° for 30 minutes. Uncover.

7Add second cup of chicken broth.

8Stir.
-
9Sprinkle with almonds.

10Bake until liquid is absorbed (approximately 1/2 hour).
