  • 1/2 lb. sliced mushrooms
  • 4 Tbsp. butter
  • 1 large onion
  • 1 c. barley (long cooking)
  • 2 c. chicken broth
  • 1 clove garlic
  • toasted almonds for sprinkling on top

Directions

    Saute onion and mushrooms in butter.

    Add barley and brown. Add crushed garlic clove.

    Pour into greased casserole.

    Pour over this 1 cup of chicken broth.

    Cover.

    Bake at 350° for 30 minutes. Uncover.

    Add second cup of chicken broth.

    Stir.

    Sprinkle with almonds.

    Bake until liquid is absorbed (approximately 1/2 hour).
