Pineapple Pecan Loaf

- 3/4 c. brown sugar
- 1/4 c. shortening
- 1 egg
- 2 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/3 c. frozen orange juice, thawed
- 1 (8 3/4 oz.) can (1 c.) crushed pineapple
- 1/2 c. chopped pecans
Directions

1Cream together sugar and shortening; add egg and beat well. Sift together flour, soda and salt.

2Add dry ingredients alternately with orange juice to creamed mixture; stir well after each addition.

3Stir in undrained pineapple and nuts.

4Turn into well-greased 8 x 4 x 2-inch loaf pan.

5Bake at 350° for 50 to 60 minutes.

6Remove from pan; cool on wire rack.
