Egusi Soup

Ingredients

  • 2 Turkey wing. After my turkey wings are boiled to tenderness, i run them under cold water and remove the skin.
  • 1 lb Beef stew cut into cubes
  • 2 small Packs frozen spinach
  • 1 large Chopped Onion
  • 3 Stalks of Spring onions/scallions
  • 8 oz Ground Egusi seeds
  • 2 tbsp Palm Oil
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Seasoned Salt
  • 6 cup Water
  • 3 tbsp Grounded Cray Fish

Directions

    I a large pot, add Turkey, beef, onion and scallion cover with water and put to boil

    Once the meat is Turkey and Beef is tender Add your Egusi to the pot and stir constantly until you see a little of rising above the egusi and it start to thicken up.

    Add your Palm oil, ground Cray Fish and remaining season to the pot and let it cook for another 5 minutes

    Add the spinach and let simmer for another ten minutes and your soup is ready
