- 1 1/2 cups cheese (dri or yak milk cheese or blue cheese like gorgonzola)
- 6 medium red potatoes, thinly sliced with skin on
- 2 1/2 lbs beef, cut in bite-sized pieces
- 10 jalapenos (or similar)
- 1 tablespoon minced garlic
- 3 roma tomatoes, sliced lengthwise
- 10 green onions (green part only)
- 2 -3 tablespoons salt
- 1 sichuan pepper
- 4 slices American cheese
Directions

1Slice potatoes and put aside.

2put rest of ingredients, except cheese slices, in pot.

3Add water to just cover.

4Cook on high 20 minutes,.

5Add potatoes, then cook on medium for 15 minutes.

6Adjust salt as needed. Add cheese slices for color if desired.

7Serve with rice on the side.
