  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup peanut oil
  • self-rising flour 115 gt.
  • 1 cup wholemeal flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • salt
  • 2 cups zucchini grated, unpeeled
  • 1/2 cup nuts coarsely chopped
  • 6 2/3 tablespoons light cream cheese
  • 6 2/3 tablespoons powdered sugar
  • 1/2 lime juice and zest
  • 13/16 cup pistachios coarsely chopped

Directions

    Preheat oven to 180 degrees Celsius.

    In a bowl, whisk eggs with sugar until obtaining a whitish cream.

    Add the oil, slowly.

    Add the flour, baking powder, baking soda, and a pinch of salt.

    Stir to mix.

    Add the grated zucchini and nuts. Mix.

    Line a rectangular cake pan with parchment paper, and pour in the dough.

    Bake until brown, for about 50 minutes.

    Remove, and cool on a rack.

    Whisk the cream cheese with the sugar, and lemon zest and juice.

    Once it is completely cold, spread the icing on the cake.

    Garnish with pistachios.
