  • 2 lb. ground chuck
  • 1 pkg. taco seasoning
  • 1 can refried beans
  • 1 can sweet peas, drained
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • salsa
  • flour tortilla shells
  • 2 lb. box Velveeta
  • 1 small can Ro-Tel
  • 1 small can chopped chilies
  • 1 can cream of mushroom soup
  • 1 can Cheddar cheese soup
  • sour cream
  • black olives
  • mushrooms

Directions

    Brown ground chuck, onion and green pepper and drain fat.

    Mix in taco seasoning, refried beans and sweet peas.

    Add salsa to desired consistency.

    Place meat mixture (approximately 2 tablespoons) in a flour tortilla.

    Roll; place into cake pan. Fold side down.

    Fill cake pan with enchiladas.
