- 1 lb. ground beef
- 1 clove garlic, minced
- 1 medium onion, chopped
- 1 (12 oz.) can tomato paste
- 1 c. water
- 1/2 tsp. salt
- 1/2 c. sliced olives
- 1 (4 oz.) can chopped green chilies, drained
- 2 eggs
- 2 c. cottage cheese
- 1 (8 oz.) pkg. Monterey Jack cheese, sliced
- 1 (10 oz.) pkg. corn tortillas, quartered
- 1 c. (4 oz.) shredded Cheddar cheese
- sour cream
Directions

1Crumble ground beef into 1 1/2-quart glass casserole; add onion and garlic.

2Microwave (High) 5 to 6 minutes or until set; stir once.

3Stir to break meat into small pieces; drain.

4Stir in tomato paste, water, green chilies, olives and salt.

5Cover with lid.

6Microwave (High) for 9 to 10 minutes or until flavors are blended and sauce is bubbly, stirring twice.
