- 1 small onion, chopped
- 1 doz. corn tortillas
- 10 oz. Cheddar cheese, grated
- 1/4 c. black olives, chopped
- 2 baked potatoes, chopped
- 1/2 tsp. salt
- dash of pepper
- 1 can mild enchilada sauce
- 1 (15 oz.) can tomato sauce
- 1/2 c. water
- 1 small can peas
Directions

1Brown meat, add salt and pepper.

2Lightly grease a 10 x 15-inch baking dish and line with 1/2 of tortillas (break up for easier serving).

3Cover with 1/2 the meat, sprinkle with 1/2 the potatoes, peas, olives, onion and cheese.

4Repeat, except for cheese.
