- 3 Tbsp. margarine
- 1 c. plus 2 Tbsp. sugar
- 3 room temperature eggs, separated
- 2 Tbsp. flour
- 1 1/2 c. milk
- 6 Tbsp. lemon juice (2 lemons)
- 1 Tbsp. grated lemon rind
Directions

1Preheat oven to 350°.

2Butter a souffle dish.

3Put teapot of water on to boil.

4Beat margarine and sugar for 3 minutes.

5Add egg yolks one at a time, beating well each time.

6Mix in flour, mix in milk (1/2 at a time).

7Mix in juice and rind.

8Beat whites until stiff peaks and fold into batter.

9Carefully pour into dish. Set dish into another pan and pour boiling water halfway up. Bake for 1 hour until golden brown.
