Enchilada Casserole

Ingredients

  • 1 medium onion
  • 1 lb. ground beef
  • 1 (8 oz.) can tomato sauce
  • 1 can enchilada sauce
  • 1 can chili with beans
  • 6 corn tortillas
  • 1/2 c. water
  • 1/2 lb. sharp cheese
  • 1/2 can pitted ripe olives, halved

Directions

    Chop onion and add to ground beef.

    Brown.

    Add tomato sauce, enchilada sauce and water.

    Bring to a boil.

    Put layer of sauce in greased casserole dish, cover with layer of tortillas.

    Cover these with part of shredded cheese and olives.

    Repeat until all ingredients are used.

    Pour chili with beans over top.

    Bake at 325° for 1 hour or until tortillas are soft.
