- 1 c. chopped onions
- 1 medium green pepper, chopped
- 1/2 c. vegetable oil
- 2 lb. ground beef
- 1 (1 lb.) can tomatoes
- 1 (6 oz.) can tomato paste
- 2 pkg. enchilada sauce mix
- 1/3 c. water
- 2 cans (16 oz.) kidney beans, drained
- 8 tortillas
- 1 pkg. shredded Cheddar cheese
- 1 c. shredded lettuce
- 1 medium tomato, chopped
Directions

1Saut onions and green peppers in 2 tablespoons oil until soft in large skillet. Add 2 tablespoons oil and brown ground beef. Stir in canned tomatoes, tomato paste, enchilada sauce mix, water and beans. Lower heat and simmer 10 minutes.
