  • 1 c. chopped onions
  • 1 medium green pepper, chopped
  • 1/2 c. vegetable oil
  • 2 lb. ground beef
  • 1 (1 lb.) can tomatoes
  • 1 (6 oz.) can tomato paste
  • 2 pkg. enchilada sauce mix
  • 1/3 c. water
  • 2 cans (16 oz.) kidney beans, drained
  • 8 tortillas
  • 1 pkg. shredded Cheddar cheese
  • 1 c. shredded lettuce
  • 1 medium tomato, chopped

Directions

    Saut onions and green peppers in 2 tablespoons oil until soft in large skillet. Add 2 tablespoons oil and brown ground beef. Stir in canned tomatoes, tomato paste, enchilada sauce mix, water and beans. Lower heat and simmer 10 minutes.
