- 1 lb. ground beef
- 1 large onion, chopped
- 1 Tbsp. chili powder
- 1 can diced tomatoes
- 8 corn tortillas
- 1/4 c. oil
- 1 can enchilada sauce
- 1/2 c. sliced olives
- 2 c. shredded Monterey Jack cheese
- 1/2 c. shredded Cheddar cheese
Directions

1Brown ground beef and onion.

2Add chili powder and diced tomatoes.

3Simmer.

4Fry tortillas, one at a time, in another skillet with oil.

5Spoon 1/2 cup meat mixture on each tortilla. Roll tightly and place in casserole dish.

6Pour enchilada sauce over rolled tortillas.

7Bake at 350° for 20 minutes.

8Top with cheese and sliced olives.

9Bake until melted.

10Serves 6 to 8.
