- 1 lb. ground beef or turkey
- 1 envelope taco seasoning
- 1 can peas
- 1 can new potatoes, diced
- 18 corn tortillas
- 2 cans enchilada sauce
- 8 oz. Cheddar cheese
Directions

1Preheat oven to 350°.

2Brown and drain meat; season according to directions on taco seasonings package.

3Drain and dice potatoes and add to meat.

4Drain peas and add to meat.

5Put enchilada sauce in shallow bowl.

6Dip six tortillas in sauce and line bottom of 9 x 13-inch pan.

7Put half of meat mixture over tortillas and sprinkle one third of cheese on top.

8Repeat layers.

9Dip remaining six tortillas and cover casserole.

10Sprinkle remaining cheese on top and pour remaining sauce over casserole.

11Cover with aluminum foil and bake for 45 minutes.
