Enchilada Casserole

Ingredients

  • 1 lb. ground beef
  • 1 c. chopped onions
  • 1 clove garlic, minced
  • 1 (14 1/2 oz.) can tomatoes, undrained and crushed
  • 1 (4 oz.) can diced green chilies or 1 small green pepper, chopped
  • 1 (2 1/4 oz.) can sliced ripe black olives, drained
  • 1 Tbsp. chili powder
  • 1 1/2 tsp. ground cumin
  • 2 c. shredded Cheddar cheese
  • 2 c. smashed Fritos corn chips or 2 c. smashed tortilla chips

Directions

    Brown meat with onions and garlic until vegetables are tender. Stir in next 5 ingredients.

    Bring to a boil, then simmer 10 minutes. Stir occasionally. In a 2-quart casserole, layer 1/2 meat, 1 cup cheese and 1 cup chips.

    Top with last 1/2 meat and chips. Bake at 350° for 30 minutes. Top with remaining cheese and bake 5 minutes more.
