- 1 pkg. corn tortillas
- 2 cans Old El Paso enchilada sauce
- 2 c. pkg. shredded Cheddar or Monterey Jack cheese
- 1 lb. ground beef
- 1 small onion (optional)
- 2 Tbsp. oil
Directions

1Brown ground beef; chop as browning.

2Add onion; drain and set aside.

3Using the 2 tablespoons oil, oil all sides of a casserole dish, then layer the following:

4corn tortillas, ground beef, enchilada sauce and cheese.

5Repeat process until all ingredients are used, ending with the cheese (do this as if preparing lasagne). Bake at 350° for 45 minutes (until bubbling).

6Remove and let stand a few minutes before serving.

7May be served with shredded lettuce and chopped tomato on the side.

8Spanish rice also makes a nice accent.

9Serves 6 to 8.
