  • 10 corn tortillas
  • 1 12 lbs ground beef, browned
  • 12 onion
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1 (10 ounce) can red enchilada sauce (Ole' El Paso)
  • 4 cups shredded cheddar cheese

Directions

    Spray a 9x13 pan with Pam.

    Brown hamburger with onion, drain.

    Add soup and enchilada sauce.

    Tear tortillas in half.

    Place layer of tortillas in bottom of casserole dish.

    Pour half the meat mixture over the tortillas.

    Top with cheese.

    Repeat a second layer.

    Bake at 350 for 30-35 minutes or until cheese is bubbly.

    Let rest for 10 minutes prior to serving so the cheese can set up.
