Ingredients
- 1 lb. ground beef
- 1/4 c. chopped onion
- 2 eggs plus 2 additional whites
- 1/3 c. sliced ripe pitted olives
- 2/3 c. evaporated milk
- 1 c. tomato sauce
- 1 envelope enchilada sauce
- 2 c. corn chips
- 1 c. (4 oz.) shredded Cheddar cheese
Directions

1Cook beef and onion in skillet until beef is browned and onion is tender.

2Drain excess fat off.

3Spread beef in bottom of a 10 x 6 x 1 1/2-inch baking dish.

4Beat together the eggs, milk, tomato sauce and enchilada sauce mix; pour over meat.

5Sprinkle with sliced olives; top with corn chips.

6Bake, uncovered, in a 350° oven for 20 to 25 minutes, or until firm.

7Cut into squares to serve.
