Ingredients

  • 1 lb. ground beef
  • 1/4 c. chopped onion
  • 2 eggs plus 2 additional whites
  • 1/3 c. sliced ripe pitted olives
  • 2/3 c. evaporated milk
  • 1 c. tomato sauce
  • 1 envelope enchilada sauce
  • 2 c. corn chips
  • 1 c. (4 oz.) shredded Cheddar cheese

Directions

    Cook beef and onion in skillet until beef is browned and onion is tender.

    Drain excess fat off.

    Spread beef in bottom of a 10 x 6 x 1 1/2-inch baking dish.

    Beat together the eggs, milk, tomato sauce and enchilada sauce mix; pour over meat.

    Sprinkle with sliced olives; top with corn chips.

    Bake, uncovered, in a 350° oven for 20 to 25 minutes, or until firm.

    Cut into squares to serve.
