- 1 lb. ground beef
- 1 large can enchilada sauce
- 2 c. Jack and Cheddar cheese
- oil
- 12 corn tortillas
- olives (slices)
- salt and pepper
- onion
Directions

1Brown ground beef and add seasoned salt and pepper and chopped onion.

2Drain off fat and set aside.

3Heat enchilada sauce in saucepan and set aside.

4Heat about 2 inches of oil in another saucepan and dip tortilla into oil, enough to soften.

5Drain on paper towel and place on a plate.

6Fill tortilla with ground beef, onion and cheese; roll up and place in 13 x 9 x 2-inch baking pan. Continue to fill, roll up and place filled tortillas into pan until full.

7Then pour remaining sauce over all and sprinkle cheese.

8Top with diced olives and bake in 350° oven for 20 minutes.
