  • 12 corn tortillas
  • 2 cans mild enchilada sauce
  • 2 lb. ground meat
  • 2 c. grated Colby Jack cheese
  • 12 Tbsp. finely chopped onions
  • 1 tsp. salt and pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. chili powder

    Fry ground meat in skillet until brown.

    Add onions and cook until tender.

    Drain and set aside.

    Heat enchilada sauce until hot.

    Fry tortillas in hot grease, about 1 minute, each side. Then dip in enchilada sauce and put in bottom of 13 x 9-inch pan. Layer 6 tortillas, meat, sauce and cheese.

    Make 2 layers using all meat and sauce.

    Top with lots of cheese.

    Bake in oven at 350° until all cheese is melted and bubbly.
