  • 1 1/2 lb. ground chuck
  • 1/2 c. sliced green onion
  • 1 to 2 Tbsp. chili powder
  • 2 (10 oz.) cans enchilada sauce
  • 1 1/2 tsp. garlic salt
  • 1/4 to 1/2 tsp. pepper
  • 2 Tbsp. cooking oil
  • 12 corn tortillas
  • 1 c. shredded Cheddar cheese (4 oz.)
  • 1 c. shredded Monterey Jack cheese (4 oz.)
  • sliced green onion (optional)
  • dairy sour cream (optional)

Directions

    Cook beef and 1/2 cup onions until meat is brown and onions are tender. Drain fat. Add chili powder. Cook and stir 1 minute. Stir in 1 can enchilada sauce, garlic salt and pepper. Simmer meat mixture, covered, for 20 minutes, stirring occasionally.
