- 1 1/2 lb. ground chuck
- 1/2 c. sliced green onion
- 1 to 2 Tbsp. chili powder
- 2 (10 oz.) cans enchilada sauce
- 1 1/2 tsp. garlic salt
- 1/4 to 1/2 tsp. pepper
- 2 Tbsp. cooking oil
- 12 corn tortillas
- 1 c. shredded Cheddar cheese (4 oz.)
- 1 c. shredded Monterey Jack cheese (4 oz.)
- sliced green onion (optional)
- dairy sour cream (optional)
Directions

1Cook beef and 1/2 cup onions until meat is brown and onions are tender. Drain fat. Add chili powder. Cook and stir 1 minute. Stir in 1 can enchilada sauce, garlic salt and pepper. Simmer meat mixture, covered, for 20 minutes, stirring occasionally.
