  • 1 lb. ground meat
  • 1 small onion
  • 1 (10 oz.) can tomato soup, undiluted
  • 1 (10 oz.) mild enchilada sauce
  • 8 (7-inch) flour tortillas
  • 2 c. shredded Cheddar cheese

Directions

    Brown meat and onion; drain and return to skillet.

    Add tomato soup and enchilada sauce.

    Heat.

    Stir well.

    Add meat sauce mix to each tortilla.

    Sprinkle on some cheese; roll each enchilada up. Place seam-side down in a 9 x 12-inch pan.

    Pour remaining meat mixture over tortillas.

    Cover and bake at 350° for 20 minutes. Uncover.

    Sprinkle on remaining cheese.

    Bake 5 minutes.
