  • 1 medium green pepper, seeded and cut up
  • 2 large outer lettuce leaves, cut up
  • 1 c. chicken broth
  • 2 Tbsp. vegetable oil
  • 1/2 c. salsa
  • 1/2 c. sour cream
  • 1/2 tsp. salt
  • 3 c. shredded, cooked chicken or beef
  • 10 (6 to 7-inch) flour or corn tortillas
  • 2 c. shredded medium Cheddar cheese

    Place green pepper, lettuce and broth in food processor or blender.

    Blend until smooth.

    Heat oil and add green pepper mixture, salsa and salt.

    Cook for 5 minutes, remove from heat and whisk in sour cream.
