  • 2 cups Cooked Shredded Chicken
  • 1 cup Shredded Lettuce
  • 1 cup Chopped Tomatoes
  • 16 ounces Mexican Cheese
  • 1 package Flour Tortilla Shells
  • 1 can Refried Beans
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 1 can Beef Consomme
  • 1 can Enchilada Sauce
  • 1/2 teaspoon Chili Powder
  • 2 cloves Garlic
  • 1 pinch Salt
  • 1 pinch Black Pepper

Directions

    Combine butter, flour, beef consomme, enchilada sauce, chili powder, and garlic in a saucepan and heat for a few minutes.

    Layer refried beans, handful of cheese, shredded lettuce, tomatoes, salt, and pepper, another handful of cheese, and then chicken on each tortilla.

    Roll each tortilla and place in casserole dish.

    Top with sauce and cover with the rest of the cheese.

    Bake at 350 degrees for 15 to 20 minutes.
