- 150 g cornflour
- 50 g rice flour
- 200 g plain flour

- 250 g salted butter
- 170 g sugar
Directions

1Preheat oven to 160°C.

2Cream butter and sugar until light and fluffy.

3Fold in all dry ingredients into the butter mixture.

4Mix everything together, but do not overhandle the dough, or the cookie will turn out hard.

5Chill the dough to stiffen for at least 30 minutes, and make it easier to roll.

6Roll the dough about 1/4 inch thick, and cut into shapes using a cookie cutter.

7Bake until lightly golden brown. (I like it brown.).
