Escalloped Cabbage

  • Head of cabbage
  • cheddar cheese
  • Salt
  • Pepper
  • Cracker crumbs
  • butter
  • 1 c. flour
  • sugar
  • milk

Directions

    Quarter one head of cabbage and parboil to almost tender. Drain and core.

    Layer cabbage leaves in 9x13 greased pan with solid layers of sharp cheddar cheese.

    Salt and pepper to taste. Cover with cracker crumbs and butter chunks.

    Cover well with aluminum foil, and place in refrigerator until next day or continue the recipe.

    Make a thin sauce (about 1 cup) of flour, sugar and milk.

    Drizzle it over the cracker crumbs.

    Cover again with foil, and punch holes to let the steam escape.

    Place in preheated 375° oven for 60 to 90 minutes, or until nicely browned.
